Vegan Beef & Broccoli Noodles
Whip up this easy dinner in less than 30 minutes!
Since I’ve become a mom dinners have become a lot more difficult to get on the table. Which is why we’re starting a new series! Easy Peasy is a series all about recipes that are easy peasy. Recipes that are developed, tested, and made all while I have a toddler hanging off my hip - so you know it’s that easy.
First up is a recipe that I made almost weekly; vegan beef and broccoli noodles. So easy peasy, they come together in under 30 minutes and with just 7 ingredients! The flavour is full but simple and everything comes together in the same pan. I promise once you make this recipe you’ll want to add it to your dinnertime rotation every week.

Top tips for making vegan beef and broccoli noodles:
Choose fresh noodles if you have the option. Vegan-friendly fresh noodles aren’t always an option, but if they are we recommend them! The texture and flavour is just unmatched. You would like find them in the fresh pasta section of your grocery store if they’re available. Keep an eye on the label or egg ingredients.
Use your favourite vegan beef substitute. We like Beyond, but you can use any vegan beff substitute just adjust cook time accordingly.
Dark soy sauce is a must. This recipe uses both regular and mushroom dark soy sauce. The dark soy sauce adds a TON of flavour and definitely should not be skipped. We get ours at our local Asian grocery store.
How to make vegan beef and broccoli noodles:
Prep Time: 10 Min | Cook Time: 15 Min | Total Time: 25 Min
Makes: 4 servings
Ingredients:
226 g vegan chow mein noodles
2 small or 1 medium head of broccoli
1 pkg Beyond Beef*
1 1/2 tbsp soy sauce
1 1/2 tbsp mushroom dark soy sauce
2 tbsp maple syrup
sesame seeds, for topping
Instructions:
Cook noodles according to package instructions and set aside.
Chop broccoli into bite-sized florets.
Place a frying pan over medium heat and add broccoli florets and 1-2 tbsp of water. Place on the lid and allow broccoli to steam for 5 minutes or until mostly fork tender. Remove from the pan and set aside.
To the same pan over medium heat, add oil and place the Beyond beef into the pan. Let cook for 1 minute before starting to break into bite-sized pieces. Cook for 5-6 minutes or until evenly browned and cooked through - tossing around every minute or so to brown all sides.
Drizzle over the soy sauce, dark soy sauce, and maple syrup - toss to coat evenly and cook for 1 minute. Sprinkle with sesame seeds and toss.
Add the noodles and broccoli to the pan with the vegan beef and toss to coat in the sauce. Cook for an additional 1-2 minutes.
Remove from the heat and serve warm.

*We like using Beyond Beef but you can use whatever vegan beef substitute you enjoy or have access to.
