Sesame Chex Mix
Chex, pretzels, sesame sticks, rick crackers, roasted peas, and nori tossed and baked in a sesame glaze.
I will always be a snack mix fan - in particular this sesame chex mix. We first made this recipe in nearly 7 years ago and I promise I have been obsessed since then. A combination of rice chex cereal, sesame sticks, pretzels, rice crackers, roasted peas, nori, and sesame seeds tossed and baked in a sesame glaze.
Be sure to double or triple batch this recipe because a single batch almost never lasts more than a few days once made. It’s packed with so many textures and flavours, the key to a great snack mix.

How to make sesame chex mix:

Makes: approx. 2 cups
Ingredients:
40 g (1 1/3 cup) chex cereal
85 g (2/3 cup) sesame sticks
20 g (1/3 cup) pretzels
70 g (1 1/2 cups) rice crackers
65 g (2/3 cup) roasted peas
2 nori sheets, diced
10 g (1 tbsp) sesame seeds
30 mL (2 tbsp) maple syrup
14 g (1 tbsp) butter
15 mL (1 tbsp) water
15 mL (1 tbsp) soy sauce
10 mL (2 tsp) sesame oil
15 g (1 tbsp) rice vinegar
Instructions
Heat oven to 275F. Line a baking sheet with parchment paper or a silicone baking mat.
In a large bowl combine chex, sesame sticks, pretzels, rice crackers and roasted peas - toss to combine.
In small saucepan over medium heat combine maple syrup, non-dairy butter, water, soy sauce, sesame oil, and rice vinegar. Cook, stirring continuously until the mixture starts to thicken - about 5 minutes. Remove from the heat.
Pour the maple mixture over the chex mixture and toss to coat. Sprinkle with sesame seeds and chopped nori sheets and toss again.
Spread on the prepared baking sheet and bake for 45 minutes.
Remove from the oven and allow to rest 10-15 minutes on the baking sheet. Once cooled, transfer to an air-tight container to store.
