One of my favourite ways to use up a bunch of fresh local fruit is a crumble or a crisp! They’re super easy to make and come together with very few ingredients. Perfect for an easy breakfast treat or a dessert for your next dinner party. This Easy Peach Crisp is the perfect summer treat.
The peach filling is simple but delicious; just fresh, local peaches sliced and tossed with cinnamon and ginger (plus a couple other ingredients). Then topped with a golden oat crisp topping made with just 7 ingredients.

Top tips for making an Easy Peach Crisp:
Cut fruit in even pieces. Slices or cubes? It doesn’t matter as long as the pieces are an even size to ensure and even bake.
Use fresh fruit when possible. This recipe was developed with fresh fruit so we recommend for the best results to use fresh. It can be made with frozen fruit, though we’d recommend increasing the amount of cornstarch in the filling if so.
Bake until golden brown on top. Crisps are hard to over-bake, you’re looking for a nice golden brown colour on top and a bubbling filling.
Let cool slightly. This can be eaten warm or cooled. We like to have it warm for dessert and cooled for breakfast the next day.

Ingredients
Peach Filling
500 g sliced peaches (about 6 peaches)
20 g (2 tbsp) cornstarch
12 g (1 tbsp) brown sugar
1 tsp ground cinnamon
½ tsp ground ginger
pinch kosher salt
Oat Crisp Topping
56 g (¼ cup) vegan butter, melted
50 g (¼ cup) brown sugar
1 tsp ground cinnamon
90 g (¾ cup) all-purpose flour
30 g (¼ cup) whole wheat flour
45 g (½ cup) quick oats
coarse sugar , for topping
Instructions
Heat the oven to 375°F.
To make the filling; combine peaches with cornstarch, brown sugar, ground cinnamon, ground ginger, and kosher salt. Set aside.
To make the crisp topping; in another bowl combined melted butter, brown sugar, ground cinnamon, all-purpose flour, whole wheat flour, and oats. You may need to get in there with your hands to combine into a crumble-like topping.
Spread the peach filling evenly into a tbdxtbd baking dish. Top with the crumble and gently press down.
Optionally, top the crisp with a sprinkling of coarse sugar.
Bake until golden brown on top – about 30 minutes.
Let cool for at least 10 minutes before serving.
